Patbingsu (Korean Shaved Ice with Red Bean Paste) is a traditional Korean recipe, for a classic dessert of shaved water ice served topped with fruit, condensed milk, rice cakes and sweetened bean paste. Patbingsu (팥빙수) is a version of bingsu, Korean shaved ice with sweetened red bean paste. This version starts with plain frozen water rather than the frozen milk used for most other bingsu recipes. This is probably the most popular summer dessert in Korea.
Ingredients:
400g ice cubes (0.9 pounds)
2 tbsp pat anggeum (sweetened red bean paste) [or more to taste]
2 tbsp sweetened condensed milk (or more to taste)
16 mini mochi rice cakes
80g strawberries, chopped
45g kiwi fruit, peeled and thinly sliced
45gg blueberries
45g pineapple, chopped
Method:
Place the ice cubes into a food processor (or shaved ice machine if you have one). Process the ice for about 20 seconds until it has a smooth snow-like texture.
Turn the shaved ice into a chilled serving bowl and top with your choice of fruit. Now add a dollop of red bean paste and the mochi cakes.
