Palakottai Curry (Jackfruit Seed Curry)

Method:

Place the jackfruit seeds in a mortar and crush with a pestle. Now peel off the skins from each jackfruit seeds. Wash the seeds well then place in a pressure cooker with 120ml water and a little salt. Pressure cook for 3 whistles then use the quick release method to release the pressure.

Set a wok or frying pan over medium heat. Add 3 tsp oil and when this is hot add the mustard seeds, crushed fennel seeds and the slit green chilli.

Cook for about 90 seconds until the mustard seeds begin to splutter then add the chopped onions and fry for about 5 minutes, or until soft and translucent.

Stir in the ginger-garlic paste and fry for a couple of minutes to cook out the raw taste.

Add the tomato and cook for about 10 minutes until soft and starting to break down. scatter over the chilli powder, ground coriander seeds, turmeric powder and salt then stir to combine before adding 4 tbsp water and mixing again.

Bring to a simmer and cook for 2 minutes then add the pressure cooked jackfruit seeds. Mix well, return to a simmer and cook for 2 minutes.

Take off the heat, garnish with coriander leaves and serve.
