The origin of this recipe is a Chinese medicinal soup made with Chinese angelica and ginseng roots. I've replaced the Chinese angelica with dried garden angelica (Angelica archangelica) root
Ingredients:
600g chicken pieces (bone in)
1l water
Salt, to taste
Bring a pan of lightly-salted water to a boil. Add the chicken pieces and blanch for a few minutes, until you see the scum rising to the surface.
Drain and rinse the chicken then set aside for later
Rinse all the remaining ingredients briefly and drain. Place the dried spices and water into a small saucepan and bring to a boil. Add the chicken pieces and then return to a boil again.
Reduce the heat to a very low simmer, add the lid and cook very gently for 2 hrs.
