Nigerian Spiced Chicken Pepper Soup is a traditional Nigerian recipe for a classic stew of chicken with spices in a hot chilli-based stock thickened with ground, dried, crayfish. Ingredients:
1.5kg whole chicken, cut into serving pieces
2l water or stock
50g chopped fresh scotch bonnet chillies
100g Pepper Soup Spices
50g ground, dried, crayfish (or prawns)
50g chopped mint
1 onion, chopped
1 clove garlic, crushed
oil for frying
Method:
Wash the chicken, cut into serving pieces and place in a pot with a little oil. Fry until browned then add the chopped onion, chillies and crushed garlic.
Add a little stock, bring to the boil and simmer for 30 minutes, until the chicken is cooked. Add the pepper soup seasoning and cook for a further 30 minutes until the chicken is tender (add more stock if needed). Stir-in the crayfish and the mint leaves along with the remaining stock, bring to a boil and simmer for a further 10 minutes.
