Pap is an Old English word that simply means 'porridge' or 'gruel' and it's a term that's entered most sub-Saharan African languages. Many traditional West African dishes (particularly soups) are served with pap. Pap is made with West African white maize flour, often known as mealie meal.
Ingredients:
300g maize meal (or polenta) [preferably mealie meal, white maize meal]
300ml water
Method:
Bring the water to a boil and add the white maize meal in a steady stream, stirring continuously until the mixture is stiff. Leave to simmer for 25 minutes, stirring every five minutes to prevent burning.
