Mushroom Rice Stuffing is a traditional American recipe for a classic stuffing of mushrooms, rice and shallots with spices and herbs that's typically served as a garnish for Thanksgiving. The full recipe is presented here and I hope you enjoy this classic American version of: Mushroom Rice Stuffing.
Melt the butter in a pan, add the shallots and mushrooms and cook for about 5 minutes, or until the onions have softened.
At this point stir in the rice, parsley, basil, garlic powder, nutmeg, salt and black pepper. Toss gently to combine then turn into a well-greased 1l ring mould or baking pan. Cover with foil then transfer to an oven pre-heated to 170°C and bake for about 20 minutes.
Alternatively the stuffing can be used to stuff the neck and body cavity of a turkey before roasting (the quantity given here should be enough for a 2.2kg turkey).
