Ingredients:
enough pizza dough for two 30cm diameter pizzas
150g grated Mozzarella cheese
35g grated Parmesan cheese
4 tbsp pizza sauce
8 long, herbed, sausages
mix of shredded onions, green bell peppers, olives and herbs to stuff the dough
1 tbsp Italian herbs
Method:
Prepare the pizza dough according to the recipe. Place the sausages in a greased baking tray, transfer to an oven pre-heated to 180°C and roast for about 30 minutes. Remove from the oven and allow to cool.
In the meantime, prepare the pizza dough according to the recipe then roll out and cut into eight squares large enough to contain the sausages. Spread a little pizza sauce on each square then cover with the cheeses. Set a sausage in each and add your choice of pizza toppings and herbs.
Wrap the sausages completely in the pizza dough, ensuring that you pinch the ends closed. Set on a baking tray then transfer to an oven pre-heated to 180°C and bake for about 15 minutes, or until the crust is nicely browned.
