Mrozonka z Truskawek (Polish Strawberry Mousse) is a traditional Polish recipe for a classic dessert of a red wine, cream and strawberry mousse bound with gelatine. Ingredients:
1 envelope unflavoured gelatine (or 4 leaves of gelatine, or 7g powdered gelatine)
60ml cold water
350g fresh strawberries, washed and hulled
65g sugar
80ml red wine
60ml boiling water
240ml double cream, whipped
Method:
Soak the gelatine in the water to soften and set aside. Meanwhile, combine the strawberries and sugar in a food processor and blend until smooth. Add the wine and process until thoroughly combined.
Add the boiling water to the gelatine and water mix, stirring until completely dissolved. Pour into the fresh berry mix in the food processor then process until thoroughly combined. Transfer to a bowl and allow to cool until thickened.
Whip the cream until stiff then fold into the cold strawberry mix. Transfer to a 1l mould and place in the refrigerator to chill for at least 6 hours, or until firm. Run under a hot tap then unmould onto a serving plate. Garnish with a little icing sugar, if desired, and serve immediately.
