Moli Moli de Oloco

Ingredients:

1kg oloco beans (urad dal, Vigna mungo), ground to a powder
10 small tomatoes, chopped
10 chillies, chopped
2 large onions, sliced
4 pieces of dried mango (atchar), ground
250ml oil
2 tbsp fresh turmeric, grated
1 tsp ground cumin seeds
salt, to taste

Method:

Heat the oil in a pan, add the onions, tomatoes and chillies, bring to a simmer and cook for about 8 minutes or until the tomatoes break down to from a sauce.

Add the oloco in a steady stream, beating constantly, and cook for 15 minutes. Add the spices and stir well to combine.

Work in 120ml water and continue cooking until the bean flour is no longer raw and cook until the mixture has thickened so much it is almost solid.

Take off the heat and cut into squares. Serve to accompany prawn curry.
