Molho de Pimenta Malagueta (Malagueta Chilli Sauce)

This is a classic Brazilian hot pepper sauce that is a mainstay of Bahian cuisine. Please note that this dish is made with Malagueta Chillies and not Malegueta pepper (the seeds of Grains of Paradise).
Ingredients:
60ml red palm oil
1 small onion, chopped
7 fresh or preserved Malagueta chillies (substitute Tabasco if you can't find these as they have the same heat factor)
1 tsp fresh ginger, grated
1 tsp salt
Method:
Add the oil to a small pan and use to cook the onion over low heat until it's just soft and translucent (about 6 minute) add the chillies and continue cooking until they are very soft (about 15 minutes) then add the ginger and fry for 1 minute more. Stir-in the salt and take off the heat.
Either use immediately or store in a jar (this sauce will keep for up to a month).
