Ingredients:

35g chilli powder
2 tbsp cocoa powder (a good quality version with high cocoa solids is best)
3/4 tsp fine sea salt
3/4 tsp freshly-ground black pepper
1/2 tsp cayenne pepper
1/2 tsp ground cinnamon
1/2 tsp ground allspice
1/2 tsp ground cumin
1 tsp brown sugar

Method:

Combine all the ingredients in a small bowl. Transfer to an air-tight container where it will keep in a cool, dark, cupboard for up to 1 month.

Use as a rub for chicken or pork or as a base for mole-style chillies or Mexican-flavoured dishes.
