The literal meaning of this dish is 'provisions for a long journey'. Typically it is made from chicken boiled in salted water with dried chillies. The tradition is that this is cooked in a three-legged cooking pot over an open fire. This dish is also frequently prepared for honoured guests.
Ingredients:
1 large free-range chicken
2 tbsp dried piri-piri chillies
4 tbsp salt
Method:
Place the chicken in a large pot with the chillies and salt. Cover with water and bring to a boil. Reduce to a simmer, cover the pot and cook for about 80 minutes, or until the chicken is tender.
Drain the chicken and either serve (if for a guest) or hang up on a hook and air dry (if to be used as travelling provisions).
