Ingredients:

360g mint jelly
1/2 tsp dried rosemary, crushed
1/2 tsp freshly-ground black pepper
450g boneless leg of lamb, cut into 3cm cubes
2 courgettes cut into 3cm thick slices
1 red bell pepper, cut into 3cm pieces
1 red onion, cut into wedges
8 button mushrooms

Method:

Combine 120ml of the jelly with the rosemary and black pepper in a saucepan. Heat gently until the jelly has melted then take off the heat, allow to cool and transfer to a medium bowl. Add the lamb, stir to coat then cover and refrigerate for 2 hours.

Pre-heat your barbecue or grill then alternately thread the lamb, vegetables and mushrooms onto metal skewers. Place on your barbecue and grill to your desired level of done-ness, turning the kebabs frequently and brushing them with the remaining jelly as you do so.
