Horchata is a traditional Mexican recipe for a classic cold drink made by blending together softened rice, sugar, almonds, cinnamon and vanilla extract in a mix of evaporated milk, milk and water. The full recipe is presented here and I hope you enjoy this classic Mexican version of: Horchata.

Horchata is a delicious rice (or coconut) based drink that you can find at most Mexican restaurants in the United States and abroad.
Ingredients:
200g of white rice
150–200g sugar (depending on how sweet you like it)
65g chopped almonds
1 cinnamon stick
1 tbsp vanilla extract
340g tin Evaporated milk
375ml milk or almond milk
1l of water
Ice
Method:
Combine the rice, cinnamon and almonds in a bowl. Cover with water and set aside to soak over night. This allows the rice to soften.
Drain the rice, cinnamon and almonds, discarding the water.
Combine the soaked rice, cinnamon and almonds in a food processor with the evaporated milk. Pulse to chop then process until smooth (there should be no visible grains or fragments of rice).
Strain the mixture through a fine-meshed sieve into a jug then blend in the sugar, vanilla extract and milk.
