Mexican Fiesta Dip

Ingredients:

400g tin black beans, drained
400g tin sweetcorn drained
4 tbsp red onion, diced
2 avocados, diced
150g diced roma (plum) tomatoes
juice of 1 lime
125ml mayonnaise (or use plain Greek yoghurt)
250ml salsa
50g grated colby-jack or Monterey-jack cheese
12g coriander, chopped
75g crumbled feta

Method:

Combine the beans, sweetcorn, onion, avocado, tomato, feta, and lime juice in a bowl. Mix to combine, then set aside.

In a separate bowl, combine mayonnaise and salsa and stir until thoroughly mixed.

Pour the salsa mixture over the vegetables and toss with grated cheese and coriander.

Serve and enjoy.
