Mexican Chicken Sausage is a modern Fusion recipe for a classic sausage of chicken and pumpkin seeds flavoured with spices, chilli powder and lime zest that's shaped into sausages and fried. Ingredients:
4 thinly-sliced chicken cutlets
1 garlic clove
1 tbsp mole seasoning blend
1/2 tsp chilli powder
1/2 tsp dried lime zest, ground to a powder
1 handful fresh coriander leaves
40g toasted, hulled, pumpkin seeds (pepitas)
a little olive oil
a little chicken stock
Method:
Combine the chicken, garlic, mole seasoning blend, chilli powder, lime zest, coriander leaves and pepitas in a food processor. Pulse until the ingredients come together in a dough-like consistency (add a little olive oil and chicken stock to help with the blending).
If the mixture is very sticky (it often is) roll in a little cornmeal, breadcrumbs or chickpea flour as you form the sausage shapes. Cover in clingfilm and refrigerate for at least 30 minutes before frying.
