Meen Moilee (Keralan Fish Curry)

Method:

Set a heavy-based pan over medium heat. Once hot add the coconut oil and use to fry the ginger and curry leaves for 1 minute.

Add the onion and garlic along with the chopped green chilli. Fry for about 5 minutes, or until the onion is soft and translucent.

Now add the tomatoes and season to taste with salt. Continue cooking for about 5 minutes, or until the tomatoes begin to break down and the oil starts to separate and floats to the top.

Scatter over the turmeric and chilli powder, stirring to combine. Fry for 30 seconds to cook the spices then add 250ml water and bring the ingredients o a boil. As soon as the mixture is boiling add in the fish. Return to a boil, reduce to a simmer and cook for 5 minutes.

Reduce the heat to low and add the coconut milk (if using tinned coconut milk add 250ml of coconut milk and 250ml water).

Return to a simmer then add the lime juice and vinegar. Continue simmering for 5 minutes.

Take off the heat and serve hot.
