Mazavaroo au Limon

Mazavaroo is the classic chilli sauce or condiment of the island of Mauritius. It's a Creole speciality of the island and is served to accompany many dishes, particularly fried and barbecued fish and meats and the Chinese-inspired dish, Mines Frites

Ingredients:

100g fresh chillies
finely-grated zest of 1 lemon
50ml lemon juice
2 tbsp groundnut oil
2 tsp seedless raisins
salt, to taste

Method:

Combine the chillies, lemon zest, raisins and 2 tbsp lemon juice in a blender. Process until smooth then turn into a pan.

Mix in the remaining lemon juice and 2 tbsp groundnut oil and fry gently, stirring constantly, for 10 minutes. Season lightly with salt then turn into a blender and process until smooth again.

Cool and store in a jar. Pour a thin layer of oil on the top and store in the refrigerator. It will keep for several weeks if you top-up the oil layer when you use it.
