These beef kebabs with garlic and bay leaves are generally accepted as the national dish of Madeira.

Ingredients:

1kg of beef tenderloin, cubed
1 branch of green laurel (bay)
2 heads of garlic
coarse salt

Method:

Crush the garlic heads and the fresh bay leaves in the mortar. Strip the leaves from bay branches to form skewers.

Thread the meat onto the laurel skewers (or use metal ones), arranging the meat so that the fat all faces the same side.

Season with salt along with the crushed garlic and bay leaves;

Set on your barbecue and cook for about 20 minutes, turning frequently, until nicely browned on all sides.

When removing from the heat, shake the skewers together in order to eliminate excess salt;

Remove the meat from the skewer as you serve;

Serve with fried maize, bolo do caco and garlic butter.
