When tomatoes first became accepted in Europe as an edible fruit (they were originally believed to be toxic, like the fruit of potatoes, to which they are related) they were called 'love-apples' and love apple pottages, consommés and chilled soups became all the rage. The name of this soup hearkens back to those far-off days of the 16th and 17th centuries. The name has been revived somewhat of late when the soup is served for Valentine's day.

Ingredients:

1kg ripe tomatoes, blanched and peeled
1 generous handful of mint leaves
50g wheat germ
25g seedless raisins
vegetable stock to thin, if needed
salt and freshly-ground black pepper, to taste

Method:

Combine the tomatoes and mint in a blender and process to a smooth purée. Stir in the wheat germ and raisins then add just enough stock to make the mixture up to 1l.

Turn into a saucepan then bring to a boil. Season to taste with salt and freshly-ground black pepper, ladle into warmed soup bowls and serve immediately.
