Loomi Tea (Dried Lime Tea)

Loomi tea is a tart, citrusy tea made with limoo amani, Persian dried limes.

Method:

Tie the limes in a piece of muslin (cheese cloth) or place in a small food bag. Using the back of a knife, crack the limes open.

Place the limes in a saucepan then pour over the water.

Bring to a boil, reduce to a simmer and cook for 5 minutes (light flavour) or 10 minutes for a stronger flavour (I opt for 10 minutes).

Strain the tea into a warmed tea pot or jug then discard the limes.

Pour the liquid into cups or tea glasses and sweeten to taste.

If desired, garnish each serving with a borage flower or two.
