Leek and Potato Soup

Ingredients:

6 large potatoes, diced
3 leeks, chopped
750ml chicken stock
25g butter
50g grated Cheddar cheese
salt and freshly-ground black pepper, to taste

Method:

Boil the potatoes and leeks in the stock for about 15 minutes (until the potatoes began to disintegrate around the edges).

Season with salt and freshly-ground black pepper, work-in the butter and serve with a sprinkling of grated cheese.
