I had a leftover chicken breast and a bowl-full of leftover rice and was wondering what to do with it. So I want shopping. On the way I saw a whole stand of oxeye daisy plants and decided to collect a few leaves (they're the wild food equivalent of Chinese chow mein greens) so my supper was set. Special fried rice with chicken, shredded omelette, sweetcorn, shredded white cabbage and oxeye daisy greens.

Ingredients:

2 eggs
1 cooked chicken breast, cubed
6 tbsp frozen sweetcorn
1/6 small white cabbage, finely shredded
1/2 carrot, julienned
300g cooked rice
20g oxeye daisy greens (or use common daisy leaves)
1 tbsp Chinese five-spice powder
2 tbsp soy sauce
1 tsp Worcestershire sauce
1 tbsp oyster sauce
oil for frying
salt and freshly-ground black pepper, to taste

Method:

Beat the eggs in a bowl and season to taste with salt and freshly-ground black pepper. Set a wok over medium heat. Once hot, add a splash of oil then use to cook the eggs into an omelette. Turn the omelette out onto chopping board, fold a few times then shred. Scoop into a bowl and set aside until needed.

Increase the heat under the wok and add some more oil. Once hot add in the carrot and stir fry for a few minutes before adding the cabbage and frozen sweetcorn. Continue stir-frying for a few minutes then scatter over the five-spice powder, add the chicken and toss to combine.

Now add in the soy sauce, Worcestershire sauce and oyster sauce. Toss the ingredients to mix everything together then add in the rice by the handful. Keep stir-frying until everything is thoroughly mixed then add in the oxeye daisy greens. Again, stir fry to mix all the ingredients together.

Stir fry for a couple of minutes then add the shredded omelette and again stir-fry to combine with the other ingredients.

Cook for a couple of minutes until everything is piping hot and serve.
