Ingredients:

150g salty crackers (eg saltines)
250g margarine (no substitutes, in this case)
4 tbsp sugar
1 tsp vanilla extract
140g plain flour
150g sugar
4 egg yolks
1l milk
icing sugar

Method:

In a pan, combine 750ml of the milk with the margarine, 4 tbsp sugar and vanilla extract then gently bring to a boil then take off the heat.

Beat together the egg yolks with the 150g sugar until pale and creamy then add the flour and whisk in the remainder of the milk until smooth. Slowly pour the egg and flour mix into the pan with the milk and margarine and whisk until smooth.

Cover the base of a baking dish with baking paper then add a layer of crackers. Pour over the custard mix then top with another layer of crackers. Set aside to cool completely then refrigerate over night until the custard filling is firm and set.

To serve, remove from the oven and cut into squares then dust with icing sugar.
