Kolacky is a traditional Polish recipe for a classic dish of dough ball cakes/biscuits filled with fruit filling before being baked. The full recipe is presented here and I hope you enjoy this classic Polish version of: Kolacky.

Ingredients:
450g unsalted butter
360g icing sugar
6 egg yolks
1 tsp almond extract
1 tsp vanilla extract
1 can fruit filling (cherry is good)
900g sifted flour
Method:
Cream together the butter and sugar. Add the egg yolks one at a time, beating well, then add the flavourings. Gradually add the flour until you have a very stiff dough. Roll into balls of about tablespoon size and place them quite far apart on a greased baking tray. Make a thumb print in the centre of each ball and fill with either fruit filling or jam.
Alternatively roll out the pastry, cut into squares, lay in the filling from one corner to another. Take the corners not covered in the filling then bring the points together to partially enclose the filling and press the two corners together to seal. Transfer each kolacky to a baking tray as you shape them.
Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 15 minutes, or until done. Sift some powdered sugar over them. They can be served warm or cold and go well with coffee.
