The German city of Kiel is famous for its smoked sprats (known as Kiel Sprats), which are shipped all over Northern Europe. This classic sprat-based snack is derived from that city. You need to use whole smoked sprats (and not the tinned variety) for this dish.
Pre heat your oil in a deep fryer or wok to 180°C.
Begin with the batter. Mix together the flour and baking powder in a bowl. Work in the beer until you have a thick batter.
Take the fish and pinch off the heads and tails. Now hold the fish by the back and belly and squeeze gently. Take hold of the backbone at the head end and slowly pull. With any luck it should come out whole from the fish.
Add the fish to the batter and turn to coat thickly. When the oil is hot, drop the fish, a few at a time, into the hot oil and deep fry until golden brown all over.
Serve hot with the tartar sauce as a dipping sauce.
