Käsespätzle (Spaetzle Cheese Noodles) is a traditional German recipe for a classic dish of spaetzle noodles mixed with cheese, onions and mustard powder before being oven baked. Melt the butter in a frying pan and when hot add the onions. Fry until lightly browned (about 10 minutes).
Meanwhile, mix the cheese and mustard powder in a bowl and toss to combine. When the onions are ready add the noodles and the cheese mix. Stir to combine then transfer the mixture to an oven-proof casserole dish. Transfer to an oven pre-heated to 150°C and bake for about 25 minutes, or until the mixture is hot and bubbling. Garnish with the chopped chives and serve hot.
