As in much of Oceania, coconut crab is a delicacy in the Marshall Islands, and Jebta is a popular way to prepare it.
Ingredients:
1kg coconut crab (cleaned and cut into pieces)
250ml coconut milk
1 onion, chopped
2 garlic cloves, minced
1 tbsp ginger, finely grated
Salt and freshly-ground black pepper, to taste
Method:
Place a pan over medium heat. Add a little oil and use to fry the onions, garlic, and ginger until fragrant (about 2 minutes). Add the crab pieces and cook for about 5 minutes more, or until they turn pink.
Pour in the coconut milk, bring to a simmer and cook for 20 minutes.
Season with salt and freshly-ground black pepper, and serve with rice.
