Jamaican Salt Fish

Ingredients:

340g salt fish (for preparing your own, see the recipe on how to prepare saltfish/stockfish)
1 onion, chopped
2 hot chilies (typically Scotch bonnets), chopped
2 banana chillies, chopped
2 tbsp butter
salt and freshly-ground black pepper, to taste
3 tomatoes, chopped
1 tbsp thyme
5 rashers of bacon

Method:

Place the fish in a large bowl, cover with plenty of water and set aside to soak over night. The following day, clean the fish, break into pieces and remove as many bones as you can.

Prepare four parcels using kitchen foil. Divide the fish amongst these then top with a mix of all the remaining ingredients. Close the parcels tightly to prevent the steam from escaping.

Either place on a hot barbecue (or place in an oven pre-heated to 400°C and cook for 35 minutes.

Place the parcels on serving plates and accompany with a salad and boiled rice.
