Jalapeño Buffalo Burgers is a modern American recipe for a classic burger made from minced buffalo (bison) meat blended with onion, jalapeno chilli and garlic that's cooked on a barbecue and served with hot pepper sauce. Ingredients:
675g minced buffalo (or lean beef)
1 medium onion, finely chopped
2 jalapeño chillies, finely chopped (or to taste)
1 garlic clove, finely minced
200ml hot chilli sauce, to serve
Method:
Combine the buffalo meat in a bowl with the onion, chillies and garlic. Mix thoroughly with your hands then divide into six portions and shape these into patties about 1cm thick.
Brush your barbecue rack with olive oil, set about 10cm above hot coals, add the burgers and cook for about 5 minutes per side, or until done to your liking. Serve hot with chilli sauce.
