Irish Corned Beef Hash is a delicious and hearty dish that makes use of leftover corned beef from a traditional Irish meal. It combines tender chunks of corned beef by frying with potatoes, onions, and herbs, creating a flavourful and satisfying one-pan meal.

Ingredients:

300g cooked corned beef, chopped into small pieces
600g cooked potatoes, diced
1 large onion, finely chopped
2 tbsp unsalted butter
2 tbsp vegetable oil
1 tsp dried thyme
Salt and freshly-ground black pepper, to taste
4 eggs
Fresh parsley, to garnish (optional)

Method:

Set a frying pan over medium heat (this needs to have a lid). Once hot add the vegetable oil and use to fry the onion for about 8 minutes, or until soft and lightly browned.

Stir in the diced potatoes and dried thyme, and cook for a few minutes until the potatoes are heated through.

Add the chopped corned beef to the pan, and continue to cook, stirring occasionally, until everything is well combined and heated through. Season to taste with salt and freshly-ground black pepper (but take care with the salt as the beef may already be salty).

As an optional touch, use the back of a spoon to form four wells in the hash mixture. Crack and egg into each well then cover the pan and let the eggs cook to your favoured level of done-ness.

Divide the has between serving plate, garnish with chopped parsley and serve.
