Insalata Caprese is a traditional Italian recipe (originating on the island of Capri) for a classic and very simple salad of tomato and mozzarella slices with basil leaves that's served dressed with olive oil and black pepper (and sometimes vinegar). This is a classic and simple Italian salad of tomatoes and mozzarella with basil leaves in an olive oil dressing.
Ingredients:
1 completely ripe plum (roma) tomato per person
1 ball of mozzarella di buffala per person
6 basil leaves per person, roughly torn (use the largest basil leaves you can find as these are more peppery)
extra-virgin olive oil balsamic vinegar (optional)
freshly-ground black pepper
Method:
Slice he tomatoes thinly then slice the mozzarella a little more thickly. Arrange the slices of tomato and mozzarella on a plate (any pattern you wish). Garnish with the basil leaves, drizzle over plenty of extra-virgin olive oil and add a few generous twists of freshly-ground black pepper.
The Italians are fiercely torn about the use of vinegar in this dish, but a gentle drizzle of balsamic vinegar is both decorative and lifts the flavours. However, the use of vinegar is entirely optional.
