Dukkah is a classic Egyptian spice blend made from a blend of nuts, pulses, seeds and spices. It's typically used as a seasoning and can be used with salads or mixed with oil as a dipping sauce for bread.
Combine the chickpeas, tahini, oil, garlic, lemon juice and coriander in a dry pan over low heat. Cook, stirring constantly, for 3 minutes then turn the mixture out onto a plate and mash until smooth.
Toast the pita breads, spread with the chickpea humus then scatter the dukkah spice over the top and serve.
