Hot Dutch Potato Salad is a traditional Netherlands recipe for a classic hot potato salad with onions, bacon, green bell peppers, hard-boiled eggs and carrot in a cooked vinegar and egg dressing. Ingredients:
4 slices of bacon, diced
80g onions, chopped
80g green bell peppers, chopped
60ml vinegar
1 tsp salt
3 hard-boiled eggs, chopped
1/8 tsp freshly-ground black pepper
1 tsp sugar
1 egg, beaten
750g hot, diced, cooked potatoes
45g raw carrot, grated
Method:
Add the bacon to a pan and fry until it renders its fat then add the onion and bell pepper. Fry for 3 minutes then stir-in the vinegar, salt, black pepper, sugar and beaten egg. Cook, stirring constantly, for about 1 minute then add the diced potatoes, grated carrot and the hard-boiled eggs.
