Aguas Frescas translate to 'cool waters'. These are often made from melons such as watermelon, cantaloupe and honey-dew. This Mexican refreshing beverage, is perfect for a warm day.
Ingredients:
1.8kg honeydew melon, flesh chopped up, seeds and skin discarded
500ml water
2 tbsp pure cane sugar
Juice from 1 lime
Method:
Using a blender, combine the melon, water, sugar and lime juice (you may need to do this in batches depending on your blender's size). Pulse to chop then render the mixture to a smooth purée.
Sit a fine-meshed sieve over a large bowl then pour in the melon purée. Allow it to drain into the bowl, helping by pressing down on the pulp with the back of a spoon.
Once all the liquid is in the bowl taste and adjust the sweetness with sugar.
Turn into a pitcher then chill in the refrigerator for at least an hour before serving.
