Havgitov Spanach (Baked Spinach with Eggs) is a traditional Armenian recipe for a classic dish of spinach mixed with beaten eggs and onions that are baked in an oven until set. Ingredients:
750g spinach, steamed, drained and chopped
4 eggs, well beaten
2 onions, finely minced
120g butter, melted
2 tbsp melted butter
1/2 tsp salt
pepper, to taste
Method:
Add the melted butter to a pan and when hot use to fry the onions until soft (about 6 minutes) then stir-in the spinach and season with salt and pepper. Cook, stirring frequently, for about 4 minutes then take the pan off the heat.
Stir-in half the beaten eggs and transfer the mixture to a round cake tin (about 22cm in diameter).
Pour the remaining eggs over the top then sprinkle the 2 tbsp melted butter over everything. Transfer to an oven pre-heated to 180°C and bake for about 15 minutes, or until the egg is cooked. Allow to cook for 5 minutes, remove from the tin and serve.
