Halloumi Cheese and Vegetable Kebabs

Halloumi is a classic Cypriot unripened goat or sheep milk cheese preserved in brine that's excellent for barbecuing as it remains firm and does not melt on cooking.

Ingredients:

200g halloumi cheese
2 red bell peppers
2 courgettes
12 cherry tomatoes
2 tbsp fresh mint, chopped
1 red chilli, finely chopped
juice of 1 lemon
2 tbsp olive oil
salt and freshly-ground black pepper, to taste

Method:

Halve the cherry tomatoes, lengthways and cut the cheese, bell peppers and courgettes to a similar size.

Alternately thread the cheese and vegetables (if you are using wooden ones, pre-soak in a bowl of water for at least 20 minutes, beforehand). In a small bowl, whisk together the lemon juice, mint, chilli and olive oil. Season to taste with salt and black pepper then brush all over the kebabs.

Place the kebabs on a hot barbecue and cook, turning frequently and brushing with the marinade as you turn until the cheese is lightly browned and the vegetables and cooked and soft. Serve immediately.
