Habanero Hot Sauce is a traditional American recipe for a classic hot sauce made with carrots, lime juice, onion and plenty of habanero chillies. The full recipe is presented here and I hope you enjoy this classic American dish of: Habanero Hot Sauce.

Ingredients:
210g carrots, peeled and finely chopped
1 onion, finely chopped
360ml lime juice
3 garlic cloves, minced
2 tsp salt
18 habanero chillies, chopped (reduce the number for a milder taste)
Method:
Combine the carrots, onion, lime juice, garlic and salt in a saucepan and bring to a boil. Continue boiling for about 10 minutes, or until the carrots are soft. Take off the heat and allow to cool for a few minutes before transferring the mixture to a blender or food processor. Add the habaneros then purée until smooth (if you want a smoother sauce then strain the purée).
Pour the purée into sterilized jars, seal tightly then refrigerate. Alternatively you can process in a boiling water bath for 10 minutes then the sauce will keep for months in a cupboard (just transfer to the refrigerator once opened).
