Ingredients:
1kg beef or goat or mutton, chopped into serving-sized pieces
2 onions, sliced (1/2 onion chopped, remainder pounded to a paste)
6 green tomatoes, pounded to a paste
10 green chillies, pounded to a paste
6 tbsp palm oil
6 green bell peppers, de-seeded and pounded to a paste
200g your choice of greens (spinach, kale, taro leaves, hibiscus leaves)
Salt to Taste
Method:
Wash the beef and cut into 2cm dice. Add to a pot along with some salt, chopped onion and a little stock. Bring to the boil then simmer for 30 minutes. Meanwhile, heat the oil in a pan and add the tomatoes, chillies, onions and green bell pepper and fry for 15 minutes.
In parallel, bring a pan of salted water to a boil. Add the greens and blanch for 3 minutes then drain, place in a colander under cold, running water, squeeze out the excess liquid and finely shred.
Add the fried ingredients to the boiling meat along with the shredded greens, stir to combine and simmer for a further 10 minutes. Remove from the heat and serve on a bed of boiled rice.
