Green Mealie Soup

Mealie is the South African edible sweetcorn. It is white rather than yellow, can be eaten like American sweetcorn and makes a white flour rather like Italian polenta. It is the all-purpose staple of Southern Africa.

Fresh corn on the cob can be substituted, but you can get mealie from some African and Caribbean food stores.

This recipe is derived from the collection of C Louis Leopoldt, the Afrikaans paediatrician and poet.

Ingredients:

4 mealie cobs (white maize) or 4 corn cobs
1l water
500ml white wine
500ml vegetable stock
1 bouquet garni
1/2 tsp freshly-grated nutmeg
1 tsp soft brown sugar
salt and freshly-ground black pepper, to taste


Method:



Combine the water and wine in a saucepan then add the nutmeg and bouquet garni and season with salt and black pepper. Bring this mixture to a boil.

Cut the sweetcorn kernels from the cobs and add to the pan. Bring back to a boil and cook for 20 minutes. Remove the bouquet garni and allow to cool before liquidizing in a food processor.

Turn the mixture back into a saucepan and add the vegetable stock. Bring back to a boil then adjust the seasoning to taste. Stir in the sugar, divide between four warmed soup bowls and serve.
