Granizado de Limón (Iced Lemon Crush)

Granizado de Limón (Iced Lemon Crush) is a traditional Spanish recipe for a classic dish of lemon juice, lemon zest and sugar that's boiled with water, frozen to a crush consistency and served as a dessert, a palate cleanser or even a drink. Ingredients:

coarsely-grated zest of 8 lemons
juice of 8 lemons
200g caster sugar

Method:

Combine the lemon zest and sugar in a pan. Pour in 250ml cold water and bring to a boil. Continue boiling for 5 minutes then take off the heat and strain through a fine-meshed sieve.

Turn the liquid into a freezer-proof dish and mix in 500ml cold water and the lemon juice. Place in your freezer for about 60 minutes, or until ice crystals have formed around the edge of the dish. Remove from the freezer and use a fork to break these crystals.

Return to the freezer and freeze for 1 hour more. Again break up the ice crystals. Continue freezing and breaking up the crystals until your have a crush-like mixture. Turn into serving glasses and serve.
