Granita mit Waldmeister und Beeren (Granita with Woodruff and Strawberries)
Granita mit Waldmeister und Beeren (Granita with Woodruff and Strawberries) is a traditional German recipe for a classic cold dessert of sweet woodruff flavoured granita layered with fresh strawberries in a glass. Ingredients:
170g sugar
1 handful of sweet woodruff (include stems, flowers and leaves), rinsed
200g strawberries
1 lemon
Method
Combine 150g of the sugar in a saucepan with 350ml water and bring to a boil. Immediately take the syrup off the heat and add in the woodruff. Cover with a lid and set aside to infuse for 45 minutes.
After this time pour the liquid through a fine-meshed sieve into a shallow metal bowl. Cover the bowl and place in the freezer for at least 3 hours. During this time stir every 30 minutes to break up and prevent any large crystals of ice from forming.
In the meantime, rinse the strawberries. Set four aside for garnish. Clean the remainder and cut into small pieces.
Wash the lemon with hot water, grate the zest and squeeze out the juice. Mix the strawberries with the lemon zest, lemon juice and the remaining sugar.
To serve, roughly chop the granita, pour it into a tall container and grind it with a hand blender. Alternately layer a spoonful of granita and strawberries into tall serving glasses.
Garnish each glass with one of the reserved strawberries and serve immediately.
