Granat Cake (Sierra Leonean Peanut Brittle) is a traditional Sierra Leonean recipe for a classic sweet or candy made from a shaped blend of melted sugar and peanuts. Ingredients:
300g blanched peanuts
200g sugar
Method:
Keep aside a small handful of the peanuts. Place the remainder in a food processor and render into a powder then mix in a bowl with the reserved peanuts.
Take a non-stick frying pan, add the sugar and place over medium heat. Cook, stirring constantly, until all the sugar has melted then stir in the peanuts to combine.
Once everything comes together, turn out onto a greased baking tray. Roll out to about 2cm (4/5 in) thick then use an oiled knife to cut into large diamond shapes. Set aside to cool and harden before storing in an air-tight tin or serving.
