Galettes de Fonio à la Banane (Fonio Griddle Cakes with Banana) is a traditional Burkinabe (from Burkina Faso) recipe for a classic yeasted griddle cake made with bananas, fonio millet and sugar. These are a little bit like English muffins, a thick batter made from the West African millet, Fonio (the smallest kind of millet) that is blended with mashed bananas and leavened with yeast before being allowed to rise and cooked on a griddle.

Ingredients:

2 bananas, peeled and mashed until smooth
2kg decorticated fonio
250g powdered sugar
groundnut oil
1 packet active, dried yeast

Method:

Take 750g of the fonio, place in a food processor and work in enough water to yield a smooth slurry.

Grind the remaining fonio into flour and work this into the porridge along with the sugar, mashed bananas and yeast. Add enough water to yield a thick batter.

Cover and set aside in a warm place to rise for about 90 minutes, or until double in volume.

After this time, stir down the batter then heat a little groundnut oil in a non-stick griddle pan. Drop about 2 tbsp of the batter per cake onto a griddle pan. Cook for a couple of minutes, or until nicely browned and beginning to bubble on top. Flip over and cook on the other side.

Serve these griddle cakes warm.
