Fried Crabmeat Flautas

Fried Crabmeat Flautas is a modern American recipe (from Tex-Mex cuisine) for a classic dish of tortillas filled with a blend of crab meat, spring onions, sour cream, cheese and artichokes that are fried to heat and served with a roasted tomato and red bell pepper sauce. Ingredients:

200ml roasted tomato and red bell pepper sauce
250g crab meat (fresh or tinned)
1/2 bunch spring onions, sliced
5 tbsp butter
120ml sour cream
75g Monterey Jack cheese, grated
420g preserved artichoke hearts, drained and quartered
10 flour tortillas (about 20cm in diameter and warmed in the oven)

Method:

Heat 1 tbsp of the butter in a pan, add the crabmeat and spring onions and fry for a few minutes, until heated through.

Turn into a bowl and mix with the sour cream, cheese and artichoke hearts. Stir well to combine.

Place about 5 tbsp of this mixture onto each tortilla, spreading it evenly over the entire surface of each tortilla. Now roll the tortillas up tightly to form tightly-packed cylinders and secure with toothpicks to keep them closed.

Heat the remaining 2 tbsp of the butter in a 25cm diameter non-stick frying pan over medium heat. When hot add 4 of the flautas and fry them, turning frequently, until golden brown and heated through (about 5 minutes). Transfer to an oven pre-heated to 150°C to keep warm as you cook the remainder (add more butter to the pan, as needed).

In the meantime, warm the roasted tomato and red bell pepper sauce on the hob. When all the flautas have been cooked, arrange in a serving dish and pour over the roasted tomato and red bell pepper sauce. Serve immediately.

This makes an excellent dish for a barbecue.
