Ingredients:

4 large, ripe, tomatoes
4 tbsp basil leaves, torn
6 slices of ciabatta bread, cut about 1cm thick at a steep bias
3 large garlic cloves, lightly crushed
salt and freshly-ground black pepper, to taste
4 tbsp olive oil

Method:

Halve the tomatoes and scoop out the seeds then dice the remaining flesh. Transfer to a small bowl and combine with the basil leaves.

Grill the bread on your barbecue, cooking then so that both sides are lightly browned. Once done, rub each side with a garlic clove then spoon some of the tomato mixture over each slice of bread. Season with salt and black pepper and drizzle over a little of the olive oil.

Serve immediately.
