This is a vegetarian version of tacos, that makes an excellent quick meal.
Ingredients:
2 tbsp olive oil
2 medium red onions cut into thin wedges
1 tsp cumin seeds
250g (or 2 x 215g tins) refried beans
10 cherry tomatoes
1 small packet of fresh coriander
200g packet feta cheese, diced
8 small flour tortillas
100g iceberg lettuce, torn or shredded
250g guacamole
8 black olives (optional)
Method:
Pre-heat your oven to 190C (170C fan/Gas Mark 5).
Place a large frying pan over medium heat. Add the oil and use to fry the onions and cumin seeds until the onion has softened (about 5 minutes).
Add the refried beans to the pan and cook gently to warm through. Halve the tomatoes, chop the coriander and dice the feta. Add to the pan and gently heat until just bubbling.
Sit the tortillas directly on the oven shelves and heat for 1-2 minutes until warm and starting to puff.
Now get everyone to help themselves and create their own tacos.
Pile pieces of lettuce on the warmed tortillas and add a spoonful of the spicy bean and feta mixture. Top with a spoonful of guacamole, and an olive if you like.
