This is a classic Brazilian cassava flour accompaniment that's served with just about every Brazilian meal. It makes a wonderful accompaniment to feijoada.
Ingredients:
1 tbsp vegetable oil
1/2 onion, chopped
225g bacon, chopped (a bacon joint is best)
300g cassava (manioc) flour
2 tbsp parsley, chopped
1 tbsp spring onions, chopped
salt and black pepper, to taste
Method:
Add the oil to a pan and use to fry the onion and bacon until the onion is soft and the bacon cooked (about 8 minutes). Now stir-in the cassava flour a little at the time, stirring all he while. Finally stir-in the parsley and spring onions then season with the salt and black pepper.
Continue cooking until the cassava flour is lightly toasted (about 8 minutes) and serve immediately.
