This is a classic Irish scone that's made from the basic girdle scone batter but which is cooked as a single large scone marked out as farls (quarters). The same basic scone mixture can be converted into Girdle Scones and Irish Treacle Scones.
Ingredients:
240g plain flour
1/2 tsp bicarbonate of soda
1/2 tsp cream of tartar
1/2 tsp salt
45g lard
150ml buttermilk (see the home-made buttermilk recipe for making your own)
Method:
Sift together the flour, bicarbonate of soda, cream of tartar and salt into a bowl. Add the lard (diced) and rub into the flour until the mixture resembles fine crumbs.
Add the buttermilk and mix to a smooth dough, adding a little extra buttermilk if needed. Turn the resultant dough out onto a lightly-floured work surface and knead lightly.
Divide the dough into three or four large pieces and, using hands coated in flour, form the dough into rounds about 12mm thick then place on a lightly-greased baking tray. Mark the dough into quarters then transfer to an oven pre-heated to 220°C (Gas Mark 7) and bake for about 15 minutes, or until cooked through and golden brown.
