Irish Treacle Scones

This is another classic Irish scone made from a traditional Girdle Scone mix base flavoured with mixed spice and black treacle.

Ingredients:

240g plain flour
1/2 tsp bicarbonate of soda
1/2 tsp cream of tartar
1/4 tsp mixed spice (pumpkin pie spice)
1/2 tsp salt
45g lard
130ml buttermilk (see the home-made buttermilk recipe for making your own)
2 tbsp black treacle (molasses)

Method:

Sift together the flour, bicarbonate of soda, cream of tartar and salt into a bowl. Add the lard (diced) and rub into the flour until the mixture resembles fine crumbs.

Mix the treacle in the buttermilk until dissolved, then add the buttermilk to the flour and mix to a smooth dough, adding a little extra buttermilk if needed. Turn the resultant dough out onto a lightly-floured work surface and knead lightly.

Using hands coated in flour, form the dough into small, flat, rounds about 12mm thick then place on a lightly-greased baking tray. Transfer to an oven pre-heated to 220°C (Gas Mark 7) and bake for about 12 minutes, or until cooked through and golden brown.

Serve either hot or cold, accompanied by butter.
